Talking Turkey… and Leftovers

BLOG: Happy Thanksgiving! It is time to make your last minute purchases for the big meal and prepare for the holiday excitement that follows. Truthfully, the last place I want to find myself the day before Thanksgiving is the grocery store. However, I inevitably always run out of some ingredient needed to feed my weekend guests.

Fortunately, Stewart’s can be a great one-stop shop to grab extra milk that the kids are sure to gulp down with dinner, or to replenish the items I need to make a quick and healthy leftovers meal. And after the big day, I am only looking to prepare something simple and light to get me back on track after a day of feasting.

Stewart’s can always be depended on to have fresh and local milk that I like to use in my Cream of Turkey Soup. This is a great post-feast meal because it is low in calories, and the added protein from milk helps to keep you full. This is important so that you avoid overeating all that leftover pecan pie!

Amazingly enough, aside from the extras of my turkey dinner, this is the only purchase I need to make an easy and healthy dish. I am thankful to avoid the grocery store and my body is thankful for a light, warm and nourishing meal!

Leftover Cream of Turkey Soup
5 cups low sodium chicken broth
3 cups cooked turkey breast, chopped or shredded
3 cups of leftover vegetables (I use a variety of potatoes, green beans, carrots, onion and mushrooms)
2 cups Stewart’s non-fat milk
½ cup all-purpose flour
salt and pepper (just to taste!)

Instructions:
1. Combine chicken broth, turkey and vegetables in crock-pot. Make sure there is enough broth to cover all the turkey and vegetables.
2. Heat on low power for 6-8 hours, or until potatoes are tender.
3. Add milk and flour and stir for one minute.
4. Heat on low-medium power for about 20-30 more minutes, stirring occasionally.
5. Serve warm with leftover cornbread!

190 calories, 1.5gfat, 40mg cholesterol, 24g carbohydrate, 2g fiber, 21g protein
